Love...

Today I'm sappy. Just want to share with everyone that I have an awesome man who makes me extremely happy. Jefferson. (ok so his name isn't really Jefferson but I like it so it stays)

He grew way up though..
Now this is what I come home to.. or comes home to me depending on the day. 

Luckily, Jeff loves to eat, and I love to cook. It makes finding meals to keep making a bit hard since he loves everything! Last night I made Cheeseburger Casserole. 
He liked it and said he wouldn't mind having it again, but I didn't really like it. 
Only 263 calories per serving with 9 servings per recipe. 
I had one serving with a small salad, but Jeff had 3, I don't mind it still left enough for lunch.

Happy New Year.. Happy New Blog

Ha. Cheesy I know, but I totally feel like its time for a new blog. I have changed so much in the past few years that Arkansas Blonde isn't fitting anymore. In fact, my hair isn't even blonde anymore. I decided brunette was a great change for fall and winter and to bring in the new year.

Part of this month in mentoring is getting back in the groove of everything. As part of my "groove" I like to meal plan, and part of my meal plan process is picking foods that Jeff (the good ole man) will eat and not realize are "healthy." He wants yummy filling food and using the adjective healthy triggers something in his brain that says the food will be neither tasty or filling.

For my next few weeks (since I only grocery shop maybe once or at most twice a month) our meal plan will be the following (I make large meals so that we have leftovers)

1. Healthy Cheeseburger casserole (W/ salad)
2. Lightened Up Shepard's Pie
3. Turkey Chili with cornbread
4. Lightened up Chicken Pot Pie (It is awesome and I make it all the time)
5. Mac N Cheese (Made with cauliflower)
6. Penne Rosa with Shrimp and Salad
7. Roasted Veggie and Black Bean Rice Bowls
8. Pork Chops with Baked apples and green beans.
9. Guiltless Chicken Alfredo with Salad
10. "Fried" Fish BLT's (ok so not the healthiest)
11. Skinny Buffalo Chicken Balls with Oven fries
12. Taco Night (I love tacos... like looooove tacos)

I'll admit a lot of recipes come from eat-yourself-skinny.com (Love that girl)
I am trying to eat less meat and more veggies this year but I have to get back in a routine first and I'm taking a few steps with more turkey less beef and a couple of days with no meat.. Excited but I have to get shopping (I have like zero food here)
